Resumo: The aim of this article was to validate an instrument that measures the satisfaction of touristic-gastronomic activities, the competitiveness of gastronomic services, the sustainable awareness of the gastronomic tourists, and the memorability of the gastronomic experiences. The instrument consisted of 37 items and was applied to a sample of 380 visitors of Puebla City, in Central Mexico. Six factors emerged from the exploratory factor analysis: a) Sustainable Awareness, b) Memorability of Gastronomic Experiences, c) Competitiveness of Gastronomic Services, d) Satisfaction of Gastronomic Activities, e) Satisfaction of tasting activities and f) Satisfaction of prepared food sales services. Those factors explained 63.804% of the accumulated variance and demonstrated both global (?=0.822) and individual internal consistency, as per the Cronbach's alpha coefficient. Consequently, a reliable and valid instrument was developed, thereby showcasing its effectiveness in measuring the proposed constructs.
