Resumo: This article includes an investigation whose purpose is to analyze gastronomy as a tool with which tourism could be enhanced and the cultural identity of the people of Santander highlighted. To reach this objective, an exploratory study was undertaken, achieving a first approach to the problem. The results obtained allowed to propose an initial design of a Gastronomic Route in Santander, as a strategy to boost tourism in the region and highlight the link that historically have created the Santandereans between the territory and the food that occurs in it, and which today constitute An element of their regional identity. The route of the Route includes the municipalities of the Los Santos, Villanueva, Guane-Barichara, Zapatoca and San Vicente de Chucurí. These spaces were selected for their outstanding agricultural, agroindustrial and culinary production, as well as a natural and historical richness, whose products will be part of the itinerary of the Route.
