Resumo: Thanks to the importance that Bogota has given to the traditional gastronomic offer during the last 20 years, this city has become in an special place where its citizens and visitors have a meeting in order to satisfy all their culinary tastes in the restaurants that offer the best recipes of international food and, of course all the fabulous plates of Colombian food. It is because of the gastronomic zoning of Bogota, that the number of restaurants in the city has increased. Furthermore, this situation has allowed movement of more people inside the borders of the country and also, it has attracted a lot of foreign visitors with the only expectation of try Colombian flavours. The reason of this investigation is to expose the analysis done about the perdurability of the best restaurants of traditional Colombian food in the gastronomic market of Bogota, revealing all the operative and administrative characteristics of them. At the same time, this work try to inform about the positioning of traditional food in the national heritage of Colombia.
