Resumo: Innovation and competitiveness are phenomena that have a direct impact in business growth and regional development. Network creation and knowledge dissemination work as an engine towards the exponential growth of tourism revenues. However, one sector that fits in the tourism problematic is the food and beverage subsector, which is one of the most representative subsectors to tourism at an economic level. Although there are few studies about the food and beverage sector, there isn’t a specific focus on a territorial perspective and its influence in food and beverage enterprises. Even if these businesses are destined towards residents and tourists, they need to be acknowledged about territorial issues specific to their region. This article aims to prove, according to a literature review, on which way innovation may interfere in the food and beverage subsector towards its development, taking into account an analysis of territorial aspects. The importance of networks as well as knowledge transfer will also be analyzed according to their relevance in disseminating innovative techniques, as well as the emphasis on territorial elements and their impact on food and beverage enterprises.
