Resumo: The aim of this article is to analyse the role played by Human Resources (HR) on the service quality of estaurants located in the 13 districts that make up the Alto Minho Tourism Region. In order to carry out this task, we surveyed restaurant managers, staff and customers. This disclosed the type of HR Management used, the degree of staff motivation and the influence organisation on the customers.
