Resumo: Gastronomy can be an important local, regionaland country tourist and cultural attraction. Portugalis recognized as one of the best food and winedestinations in Europe and the “Gastronomyand Wines” product is identifi ed as representinguntapped potential for tourism by the NationalStrategic Plan of Tourism for Portugal (2006-2015)In Algarve, this product is regarded as a secondarymotivation for almost all strategic products forthe region. In this context, and recognizing theimportance of gastronomy, this paper aims topresent a project developed by the School ofManagement, Hospitality and Tourism of AlgarveUniversity in 2008/2009 and 2009/2010.The project looks to understand the value oftraditional gastronomy as intangible heritagethrough restaurants located in regional marinas andrecreational ports. A menu’s analysis and a set ofinterviews was carried out on restauranteurs.
