Resumo: This review aims to determine the work done on applying artificial intelligence in the hospitality industry in Latin America, considering both definitions and fundamental concepts in this field. To achieve this, a scope review approach was chosen, especially suitable when the existing literature has not been thoroughly reviewed or exhibits a complex and heterogeneous nature. In the analysis, it was determined that out of a total of 86 contributions distributed across 35 studies conducted by Latin American authors and applied in the region, the first place with 42% focuses on providing customer experiences, 22% on predicting valuable information for decision-making, 19% on promotion, and 17% on enhancing the production of services and products. Furthermore, it was found that the most applied artificial intelligence techniques in the hospitality sector are machine learning and natural language processing. However, a notable aspect is that research in this area by Latin American countries represents less than 3.5% of global production. Hence, this work contributes to a better understanding of the application of artificial intelligence in the hospitality and tourism industry in Latin America, both from the client's point of view and from the business perspective. It also underscores the urgency to strengthen research in this field to drive growth and innovation in an industry that plays a central role in the economies of countries in this region.
