Resumo: The objective of this research was to diagnose the safety management of gastronomic services in the tourist destination of Varadero, Cuba. Based on a sample of more than 50% of the existing services, 116 indicators were assessed for health and hygiene diagnosis, through Global Index of Hygienic Sanitary requirements fulfillment (IGHS). The behavior of the dimensions was also analyzed using the W-X matrix, the existing clusters were determined, and the results were correlated with the preparation of human resources and the form of management. The most affected dimensions were Vector Control, Food Processing and Maintenance. The evaluated indicators were fulfilled in 87%. There was a moderately strong relationship between human resource training and the form of management, with the level of safety management.
