Resumo: In 2015, the Unesco recognized Burgos as a creative city of gastronomy. Considering this recognition, this study seeks to identify the socio-cultural characteristics in the configuration of the production chain of creative gastronomy. To do this, the study analyzes the dynamics of the socio-cultural relations of the gastronomic production chain in the Province of Burgos. The method adopted is based on a qualitative and exploratory approach and the data has been gathered through interviews with agents involved in the local gastronomic production chain and from official documents. A content analysis of bibliographic and documentary material has also been carried out to substantiate the interpretation of the data. The results reveal that in the area of Burgos the sociocultural relations reinforce the process and the creative production chain in the region.
