Gastronomy is currently recognized as an important economic and cultural asset in tourist destinations. In this context, the present paper aims at investigating how algarvian gastronomy, namely, through ‘old recipes’ - is highlighted on regional historic journalistic periodicals – during 19th and 20th centuries (between 1850 and 1950). Thus, firstly, it presents a theoretical framework discussing the importance of gastronomy as an intangible heritage for tourism. Secondly, based on a qualitative methodology, it considers a content analysis of 1123 Algarvian periodicals of the Algarve Digital Library(“Hemeroteca Digital do Algarve - HDA”). The main results point out a set of traditional recipes as well as memories of gastronomic practices and sociability at the table.
