Resumo: In the framework of tourist experience, food has become one of the main reasons for the trip. Foods with a quality seal linked to origin are objects of interest due to their territorial and socio- cultural links. In Europe, some gastronomic routes, among which the wine routes stand out, are developed on designations of origin (DO) or geographical indications (GI) that give them their identity. Mexico currently has 18 Designations of Origin (DO), of which 15 are for food. However, so far the possibility of articulating gastronomic tourism with these DO has been little explored. The aim of this article is to analyze the possibilities and expectations for the development of gastronomic tourism in the Mexican DO. To do this, an exploratory, descriptive and documentary research was carried out on the territorial and socioeconomic situation of the DO and its possible articulation with tourist activities through a SWOT and CAME analysis. It was found that DOs present contrasting situations that limit or enhance the development of tourism initiatives. It is concluded that gastronomic tourism can contribute to the positioning of DOs, to boost trade and to strengthen production chains, but public policies and mixed funds will be necessary to encourage the development of rural areas.
